Smoothie Project Day 3: Strengthen Your Health and Well-being

Did you know that health and well-being strengthen your body’s ability to fend off viruses? Looking for ways to be well during COVID-19? Try these tasty smoothies for breakfast or lunch, provided by Barb Himes Registered Dietitian & Nutritionist with the Nooksack Smoothie Project. Smoothies that provide 30 gms of carbs or less are suitable for a snack.

CHOCOLATE SMOOTHIE – serves 2. Blend all the ingredients until smooth and creamy. Carbs per serving: 61 gms.

  • 5 ounces baby spinach
  • 2 cups frozen blueberries
  • ½ cup unsweetened soy, hemp, or almond milk
  • 1 banana
  •  2-4 dates, pitted
  • 2 Tbsp natural cocoa powder
  • 1 Tbsp ground flaxseeds

CREAMY FRUIT AND BERRY SMOOTHIE – serves 2. Blend all ingredients until smooth and creamy. Carbs per serving: 50 gms.

  • 1 cup pomegranate juice
  • ½ cup unsweetened soy, hemp, or almond milk
  • ½ c. frozen strawberries
  • ½ c. frozen blueberries
  • ½ c frozen peaches
  • 1 banana
  • 2 Tbsp ground flaxseeds

EAT YOUR GREENS FRUIT SMOOTHIE – serves 2. Blend all ingredients until smooth and creamy. Carbs per serving:  39 gms.

  • 5 ounces baby spinach
  • 1 banana
  • 1 c. frozen blueberries
  • ½ c. unsweetened soy, hemp, or almond milk
  • ½ c. pomegranate juice or other unsweetened fruit juice
  • 1 Tbsp ground flaxseeds
